
Protein Buckwheat Granola

A super easy granola recipe with a wonderful crunch – ideal for breakfast or a healthy snack. You can use a mixture of buckwheat and oats if wished. Buckwheat is a great source of protein, fibre and magnesium. It also contains rutin, a flavonoid that helps to maintain blood flow and strengthen capillaries.
(serves 8-10)
Ingredients:
160g buckwheat, soaked overnight then drained or a mixture of gluten-free oats and buckwheat
30g desiccated coconut
1 tbsp cacao powder
1 tbsp lucuma powder, optional
30g chocolate protein powder
½ tsp ground cinnamon
2 tbsp xylitol
2 tbsp coconut oil
1 tbsp tahini
Method:
Preheat the oven to 180C, gas mark 4
Place the drained buckwheat in a large bowl and add the coconut, cacao powder, lucuma, protein powder and cinnamon.
Put the xylitol, coconut oil and tahini in a pan and melt the oil stirring well. Pour the wet ingredients into the dry ingredients and mix thoroughly. Spread the mixture onto a lined baking tray.
Bake in the oven for 30-40 minutes stirring occasionally until the buckwheat is crunchy. Allow to cool then store in an airtight container for 1-2 weeks.
