
Red Rice and Quinoa Salad with Feta, Pomegranate and Pistachios

A colourful nutrient packed hearty salad. Red rice derives its colour from anthocyanins, a group of potent antioxidants known for their protective properties. Quinoa is a great source of protein and provides plenty of energising B vitamins, iron and magnesium too.
(serves 2)
Ingredients:
60g red rice
60g quinoa
1 tbsp coconut oil
½ red onion, sliced
1 small garlic clove, crushed
2 spring onions, thinly sliced
2 handfuls of rocket and baby spinach leaves
2 tbsp olive oil
Grated zest and juice of one orange
Salt and black pepper
60g feta cheese crumbled
30g toasted pistachios, chopped
Seeds of 1 pomegranate
Method:
Place the red rice in salted water and bring to a boil. Simmer for 20 minutes until just tender. Meanwhile, place the quinoa in a separate pan and boil in salted water for 12-15 minutes until cooked. Drain and allow the grains to cool.
Heat the coconut oil in a frying pan and sauté the onion for 5 minutes until soft and lightly golden. Just before the end of cooking add the garlic and cook briefly.
In a large bowl combine the rice, quinoa, onion and garlic. Stir in spring onions and rocket, spinach. Whisk together the olive oil and orange juice and season. Toss through the salad. Gently fold in the cheese, pistachios and pomegranate seeds.
