Overnight Bircher Bowl

By nutritional therapist Christine Bailey

This is such an easy recipe and the variations are endless. For a protein boost, blend in a scoop of protein powder. Stirring in a spoonful of tahini is a great way to boost your intake of calcium and magnesium too.

(serves 1)

Ingredients:
½ banana
75ml almond milk
2 tsp raw cacao powder
1 scoop plain protein powder
1 tsp tahini
½ tsp cinnamon
30g mixed seeds or nuts
2 tbsp gluten free oats
Apple, to serve

Method:
The night before, place the banana, almond milk, cacao powder, protein powder, tahini and cinnamon in a blender and blend to form a thick cream. Place the nuts or seeds and oats in a bowl or container and pour over the cream. Stir well.

Place in the fridge overnight to soak.

In the morning stir in a chopped apple if wished.
