Steak Salad with Pears and Chimichurri Dressing

Chimichurri is a delicious spicy herb sauce ideal for serving with meats. It is packed with antioxidant and anti-inflammatory ingredients making it a flavoursome, healthy dressing. For maximum flavour marinate the steak in a little of the sauce overnight.

(serves 2)

Ingredients:
2 x 150g lean fillet steaks
150g bag of mixed salad leaves
¼ cucumber, cut in half lengthways and sliced
1 pear, cored and thinly sliced
1 tbsp sesame seeds

For the chimichurri sauce:
1 garlic clove, crushed
Pinch of sea salt and black pepper
1/2 red chilli, deseeded and chopped
Large handful of flat leaf parsley leaves
Handful of coriander leaves
Pinch ground cumin
30ml apple cider vinegar
75ml olive oil

Method:
Make up the sauce. Place the ingredients in a blender and process to form a chunky sauce.

Place the beef fillets in a shallow container and spoon one third of the sauce over the beef. Cover and place in the fridge for 2 hours or overnight if possible.

Remove the beef from the fridge and allow to reach room temperature. Heat a griddle pan until hot. Season the steaks then pan fry for 4-5 minutes each side.

Remove from the pan and allow to rest for 5 minutes. Slice thinly.

Divide the salad greens between two plates, top with cucumber and pear slices. Place the beef slices on top and scatter with sesame seeds. Drizzle over the dressing to serve.
