Salmon Nicoise Salad with Herb Caper and Walnut Dressing

Summery and light tasting. This is a delicious protein packed salad full of beneficial omega-3 anti-inflammatory fats. Using walnut oil or an omega blend oil in the dressing is an easy way to further boost your intake of these healthy fats. Switching to sweet potato provides plenty of carotenoids known to support immune function and eye health.

(serves 2)

Ingredients:
1 small sweet potato, cut into large chunks
2 boneless salmon fillets, about 120g each, skin on
60g French beans
2 large handfuls of salad greens
30g black olives pitted
1 hard boiled egg, cut into quarters
10 cherry tomatoes, halved

For the dressing:
2 tbsp walnut oil or flaxseed oil
1 tbsp olive oil
2 tbsp capers
Juice of ½ lemon
Zest of 1 lemon
1 tsp Dijon mustard
2 tbsp chopped fresh herbs e.g parsley, basil
Salt and freshly ground black pepper

Method:
Bring a large steamer to the boil, tip the sweet potato into the water, then lay the salmon fillets, skin-side down, in the steamer basket. Cover and cook for 6-8 mins until the salmon is cooked through, then remove and set aside.

At the end of cooking add the beans to the pan and blanch for 1-2 minutes then drain with the potato.

Divide the salad greens between two bowls. Scatter with the potato, green beans, olives, eggs and tomatoes and place a salmon fillet on top.

Whisk all the ingredients for the dressing together. Season to taste. Drizzle over the salad just before serving.
