Mango Turmeric Tarts

Turmeric is a potent anti-inflammatory spice and delicious combined with sweet mango flesh and creamy cashew nuts. This raw cheesecake can be made into one large tart or individual tartlets.

(makes 12 individual or one large)

Ingredients for the crust:
150g almonds
50g desiccated coconut
Pinch of sea salt
125g raisins or dried cherries
1 tbsp vanilla extract
1 tbsp coconut oil 

For the filling:
300g cashews, soaked overnight and drained
400g chopped mango
150g coconut cream
100g coconut oil, melted
75g raw cacao butter, melted
Juice of 1 orange
2 tsp vanilla extract
½ tsp ground turmeric
Pinch of sea salt
Diced fresh mango and/or passionfruit, to decorate

Method:
Lightly grease a springform cake tin 22cm/9inch or line individual tartlets with clingfilm.

To make the crust, place the almonds in a food processor and pulse until roughly chopped. Add the remaining ingredients and process until the mixture starts to come together.

Evenly press the crust mix into the base of the prepared tin(s) and chill while you make up the filling.

To make the filling, combine the cashews, coconut cream, orange juice and mango and process together. Add the remaining ingredients and blend until smooth.

Pour the mixture into the prepared tin(s) and smooth the top. Place in the freezer to firm up.

Remove from the freezer and place in the fridge for an hour before serving. Decorate with diced fresh mango or passionfruit.
