Citrus & Berry Tarts

These refreshing little tarts are packed with healthy fats with the addition of nuts in the base and filling. Citrus fruits are a great source of vitamin C and protective antioxidants, and baobab fruit powder is exceptionally high in vitamin C. Top the tarts with fresh berries for a delicious summer treat.

(makes 4 individual tarts) 

Ingredients for the filling:
60g xylitol
200g cashew nuts
Pinch of sea salt
1 tsp baobab powder
Pinch of turmeric powder
1 tsp inositol powder
Juice and zest of 2 lemons
Juice of 2 limes

Ingredients for the base:
70g almonds
70g desiccated coconut
60g dates pitted
1 tbsp coconut oil
1 tbsp lemon juice
1 tbsp vanilla extract
Zest of 1 lemon
Pinch of sea salt

To serve:
Handful of fresh berries to top the tarts

Method:
Ideally if possible soak the cashew nuts in water for 1-2 hours then drain.

Use individual tart tins with removable bases and line with cling film.

To make the base, process the almonds and coconut in a food processor until broken into a fine crumb. Add the remaining ingredients and process until the mixture comes together.

Divide the mixture between the tart tins and press down firmly. Place in the fridge and chill while making the filling.

For the filling place the xylitol in a high speed blender or food processor and grind up until fine. Add the remaining ingredients and process until thick and smooth. Spoon the filling into the tarts and chill for 1 hour. When ready to serve top with fresh berries.
