Berry & Walnut Granola

A delicious homemade granola, this breakfast favourite has the addition of puréed berries to provide natural sweetness and antioxidants to support the brain and immune system. It contains a wealth of omega-3 nuts and seeds to nourish the brain and to provide plenty of protein to keep the body energised. It is delicious served with milk, milk alternative or yogurt for breakfast or to use as an afterschool snack with fruit. To make this grain-free, substitute the gluten-free oats for unsweetened coconut flakes.

Preparation time: 15 minutes
Cooking time: 40 minutes

Ingredients:
120g gluten-free oats or unsweetened coconut flakes
60g flaked/sliced almonds
60g pecan nuts, chopped
60g walnuts, chopped
125g pumpkin seeds and sunflower seeds
2 tbsp chia seeds
100g frozen berries or pitted cherries, defrosted
60g coconut oil, melted
1 tbsp vanilla extract
1 tbsp superberry powder (optional)
2 tbsp xylitol or erythritol (optional)

Method: 
Preheat the oven to 160°C/315°F/Gas 2½ and line two baking sheets with baking parchment. In a large bowl combine the oats, nuts and seeds, and stir well.

Put the remaining ingredients into a blender or food processor and whiz to make a smooth, thick paste.

Add the paste to the dry ingredients and stir until everything is thoroughly coated – you might find it easier to use your hands.

Spread the granola in a thin layer on the baking sheets, then bake for 30–40 minutes until golden, stirring occasionally to prevent burning. Leave to cool completely, then store in an airtight container for up to four weeks.
